Banana & Peanut Butter Chia Pudding

INGREDIENTS

1 banana
3 Tbsp peanut butter
1 1⁄2 cups (375ml) coconut milk or Almond Mylk
1 tsp cinnamon
5 Tbsp coconut sugar
Pinch vanilla bean powder
1⁄2 cup (125ml) filtered water 
1⁄3 cup (55g/1.9oz) chia seeds
 1 Tbsp cacao nibs

METHOD

Place banana, peanut butter, your preferred milk, cinnamon, coconut sugar, vanilla bean powder and filtered water in a high-speed blender, and blend on high until smooth.

Place chia seeds in a jar. Pour the blended liquid into the jar over the chia seeds and stir. Make sure there are no lumps of chia seeds at the bottom.

Refrigerate for at least 2 hours to set (I leave mine to set overnight). To serve, sprinkle with cacao nibs.
