Famous Raw Cacao Granola
This Cacao Granola Recipe was the most popular recipe from my cafes, The Raw Kitchen. I also shared the recipe for this in my cookbook, and it’s a staple in my pantry too. Theres something about it that is simple, yet addictive with the pinch of salt which really makes the chocolatey flavour sing!
Cacao Muesli Recipe
INGREDIENTS
3 cups (495g/17.7oz) buckwheat, soaked
1⁄2 cup (55g/2oz) raw cacao powder
1⁄2 tsp Himalayan sea salt
1⁄2 cup (50g/1.8oz) dried coconut chips or desiccated coconut
1⁄2 cup (100g/3.5oz) coconut sugar
1 cup (170g/6oz) sultanas
1 cup (135g/4.8oz) cashews
METHOD
Strain the soaked buckwheat and rinse under clean, running water (until water runs clear). Place in a bowl and mix with the rest of the ingredients.
When the muesli is mixed thoroughly together, place on dehydrator trays (or an oven) that have been lined with baking paper and dehydrate for 12 hours (or bake for 1 hour at 140 degrees - or until crisp), or until it has reached your preferred crunchiness. Store in an airtight container for up to two weeks.
